I am in the process of doing my taxes and the thought occurred to me about what I should list my occupation as, so as not to have the IRS consider me a dealer. Last year my accountant listed my occupation as “real estate investor”. Is this asking for trouble?

In the context of tax, “dealer” is a status, not a profession. If you are in fact a real estate investor, that is all that you need to disclose. Whether or not you are a “dealer” depends on how you sell (frequency, intent, etc.). To my knowledge, real estate investors are not currently a “target” profession (sadly, attorneys are).
