Find a mortgage company that does not require you to escrow insurance and taxes. Countywide in FL does not.

I am in the process of going through the Carlton Sheets course for the first time. Although insurance and taxes are mentioned, I am aware that in my state (FL) the mortgagor on my home (financed 95%) required me to prepaid property insurace for a whole year. They also held several months of property taxes in escrow. This was required to be paid in cash prior to close.
How are these cash outlays avoided?
