It varies from state to state (and lender to lender, and transaction type to transaction type). What state are you in?

Why not have your Title Officer walk you through the paperwork. Or, see if the local Board of Realtors offers a class on escrow (I know in my state you do not even have to be an agent to attend).

I understand the mortgage is signed, the deed, and the settlement statement…but what are all the other ones in that mountain of papers? Could someone tell me what are the papers that have to be signed at closing? i am sure it varies from state to state, but just a general overview to do a for sale by owner without using a title company or attorney.
