Depends on the scope of the non-compete clause, duration, area, and the type of business. It also depends on the state, since some state laws (particularly CA) are against these as a matter of public policy. Ultimately, a Judge will decide the enforceability of a non-compete clause.
A lot of investors have tried to make their “proteges” sign non-compete clauses about investing. This would never fly…
